• Cooking-Extrusion: The mixture is fed into an extruder, where it is subjected to a combination of heat, pressure, and shear. The high temperature and pressure gelatinize starches, denature proteins, and sterilize the product.
• Shaping and Cutting: The cooked paste is forced through a die, which shapes the product. A knife then cuts the extrudates to the desired length.
• Drying and Cooling: The extrudates are dried to reduce moisture content and then cooled to stabilize the product for storage.
